This is a batch pre-mixed that's bursting with tastes associated with holiday season, which makes it excellent for hosting a holiday party. Reserve the remaining cordial to use in morning drinks, puddings, or to make another batch of the drink.
Bikini Recipe
Yields 10 people
For the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Drink (yields 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
Making the Citrus Syrup: Combine every components in a pan, bring to a simmer, agitating until the sugar dissolves. Next, remove from the heat and let it to cool entirely. Pour into an clean bottle, close it and refrigerate it in the fridge, it will last for around one month.
To make Premix: Combine all the liquid ingredients in a big jug, let it rest for 60 minutes, then pass it through , ideally through muslin, making it perfectly clear.
When ready to serve: Pour 85ml of the batch mix to a mixing glass filled with ice, and agitate lightly for one minute to chill. Filter into an chilled martini glass or equivalent, top with the cranberries adding the final touch by giving it a light spray with the mandarin essence above the glass.
